Houston's newest entrant on the craft beer scene, Ovinnik Brewing, is working toward an opening by late summer in the Timbergrove area.

Formed by Janine Weber and partners Chris and Jen Mathis, the brewery will put a big focus on supporting the do-it-yourself, homebrewing crowd.

"I’ve been a homebrewer for 15 years. Jen’s a major brewer," Weber said. "We plan to be big supporters of that—brew-ins, yeast shares. We want that DIY theme to be our focus."

Weber said she decided to chase her dream of opening a brewery after her 35-year geology career was cut short with a layoff over a year and a half ago.

"As a geologist you have to know everything about everything. I’ve found it to be really helpful when I’m in the production of beer," she said.

The crew will likely offer Belgian-style beers, including tripels, witbiers and sours, but the lineup will be driven by what people want, Weber said.

The brewery's space at 7201 Wynnpark Drive, Houston, a former paint warehouse, will have a 3.5-barrel brewing system. A taproom will come eventually, but at the initial opening, it may be bare bones.

Weird spot for a brewery. It is literally right in the middle of a large warehouse/commercial area. Not really walkable from many homes or any apartments. It looks like there is a large townhouse development going in just to the north, but I don't think there is any direct access.

A brewery in the middle of a warehouse complex worked for Saint Arnold for all of those years, so I guess there are worse ideas.

Since no one posted an update when this was reported in February...

Ovinnik Brewing is partnering with another local start-up brewery for the brewpub at 7201 Wynnpark Drive.

For the Culture Brewing and Ovinnik Brewing are opening a joint brewery named Craft Culture X.


From Houston Chronicle in February:

"[For the Culture Brewing] been mostly making beer for private events to build up their following while searching for a location to open a brewery. The road to finding a brick-and-mortar location was “very brutal,” said Roaches, but by the end of 2021, they had locked something in.

When they finally open later this year, For the Culture will be Houston’s first Black-owned brewery. The umbrella company, Craft Culture X, is a joint venture with a majority women-owned brewery, Ovinnik Brewing."


On the start of construction and estimated opening date:

"Construction began in January at 7201 Wynnpark in the Lazybrook/Timbergrove area. They hope to be officially open by late summer or early fall of this year."
