RockyDijohn
Hebert's Ritz Restaurant at 1214 McGowan was an institution owned by Louisiana-born Clifton and Lulu Bordelon Hebert. It was open from 1941-1987. I ate there for lunch in the early 1980's. Really great food. A few menus are attached along with a photo postcard. HEBERT'S REMOULADE SAUCE RECIPE Serve the sauce with chicken, seafood or grilled vegetables. The ingredients are pantry staples, which adds to the recipe's appeal. You can alter the flavor by using different types of mustards and vinegars. 1 cup mayonnaise 1 tablespoon Worcestershire sauce 1 tablespoon paprika 1 tablespoon prepared mustard 2 tablespoons vinegar ¼ cup chopped fresh parsley 4 green onions, chopped 1 teaspoon Tabasco sauce 3 garlic cloves 2 hard-boiled eggs, chopped (optional) Process all the ingredients except the eggs in a blender or food processor until smooth. Stir in the eggs, if desired. Makes about 1 cup.
