I've just come to own a new 6'-6" pit with both a horizontal and vertical smoker with a firebox (quite nice). While I can grill just about anything I've yet to truly master a brisket. I've never smoked a turkey, pig or fish, and my sauces etc. are all rudimentary. Plus my previous experiences all centered around my work on my Dad's pit, which meant I seldom had enough time to adequately smoke anything of any real size. I thought I would start this topic for anyone who likes to grill or smoke meats/veggies etc. A little bit of advice: toss some garlic onto the fire to give the smoke a garlic flavor and enhance your meat a little. Smells great and adds to the complexity of everything. Any ideas? Comments? Advice? Any questions? Does anyone have any suggestions for cooking a pig? I'm really keen to try my hand at some pulled pork later in April. And if anyone has any non-American suggestions for BBQ I'd be really excited to hear those!
