Cisneros Design Studio appears to be the architects on this project.

Whatever opens here, I like that the proposed redevelopment will be more open and airy.

Southern Goods owners to open new restaurant in the Heights  in the former Java Java location at 911 W 11th.

Texas kids who got schooled in the history of the Lone Star State are surely familiar with Washington-on-the-Brazos, where in March 1836 a group of delegates met to make a formal declaration of independence from Mexico.
 

That chunk of Texas history is the inspiration for a new restaurant to be called 60 Pioneers, named for the folks who helped birth the Republic of Texas.

The restaurant, coming from the owners of Southern Goods, is under construction at 911 W. 11th St. at Herkimer. It's set to open in mid-August or early September, according to Southern Goods partners Lyle Bento and Charles Bishop.

 

The space, the former Java Java Café, will be home to a 3,200-square-foot restaurant with a 3,000-square-foot back patio. The owners plan to also install a 1,000-square-foot front patio. And, a bonus for any restaurant, the space comes with parking for 50.

 

Bento said he and Bishop weren't actively looking for a new spot to expand their business but their Southern Goods landlord owns the Java Java Café space and approached them about a lease.

 

"All the factors came together," Bishop said. "Where are you going to find a space in the Heights with 50 parking spaces? We couldn't afford to pass it up."

Southern Goods, not even a year old (its first anniversary is in August), will operate as a more chef-driven restaurant while 60 Pioneers will serve as a more casual version of the partners' popular first venture at 632 W. 19th St.

 

The menu will be inspired by even more Texas history. Think of the flags over Texas, especially French, Spanish and Mexico, as well as historical cultural influences (German, Czech, Cajun/Creole) – that's a wealth of possibilities for chef Bento to work from.

 

"You can find these influences all over Texas," he said.

 

The menu could include barbecue, Cajun dishes, bratwurst, chicken-fried steak, enchiladas and kolaches in addition to burgers and salads. About 25 items total, which is about double the offerings at Southern Goods.

 

The new restaurant also aims to be very kid friendly, family friendly and even dog friendly.


Bishop and Bento described the restaurant has having a large open kitchen with a large bar (it's in the "wet" part of the Heights) where craft cocktails will be served. About 20 taps for beer are planned as well as a wine list with an emphasis on Texas wines.

 

Bento said he's excited to have another outlet for his culinary creative energy. He's even planning a gooey Texas riff on macaroni and cheese: a dish with four different Texas cheeses smothering Texas-shaped pasta.

Change of plans after lawsuit filed

No more 60 Pioneers but this will be Presidio with Adam Dorris.

Just last week came news that chef Lyle Bento was suing his Southern Goods partner, Charles Bishop, with whom he had planned to open 60 Pioneers this fall in the former Java Java space, at 911 W. 11th Street in the Heights.
 

In the wake of that split,  Pax American chef Adam Dorris will team up with Bishop to open a restaurant called Presidio in that space instead.  Contractor Taylor Lee, another partner with Bishop in Southern Goods and Ladybird's, is the third member of the Presidio triumvirate, overseeing the extensive remodeling of the 1940s building.
 

Expect a more casual version of  Dorris' s cuisine at Pax, which was rated Houston's number 6 restaurant on the Chronicle's recently released list of Houston's Top 100 Restaurants. The full bar of 20 regional and national beers on tap, cocktails and wine will be curated by Bishop, who's known for his beverage work at such venues as Liberty Bar and Cottonwood.
 

They're promising "everyday food" seven days a week in an atmosphere likened to a"Texas food hall" coupled with a neighborhood bar, all augmented by 4000 square feet of patio space for dining and live music — a Bishop signature.
 

So what will the food be like? Dorris's trademark bold flavors will meet some Southern ideas and carefully sourced ingredients in daytime sandwiches, salads and vegetable dishes. Dorris's skills with charcuterie, salumi and fermentation will get some play.
 

At night, look for Dorris's take on Texas and regional classics, including some dishes that hearken back to his childhood. Presidio will be open continuously and daily, from 10:30 a.m. to midnight Monday through Saturday, and 10:30 a.m. to 10 p.m. on Sunday.
 

They're aiming for a late November opening. And Dorris wants to make one thing clear: he remains Executive Chef/Partner at Pax Americana and the driving force behind the restaurant. He recently promoted the talented Martha Wilcox de León to Chef de Cuisine, and she'll continue to run the Pax kitchen daily.
 

Dorris has also hired Daniel Blue, former sous chef at Hunky Dory, to round out his kitchen management team at Pax. Interesting historical note: Blue and Dorris started culinary school on the same day in the same class.

Look the menu to offer “reinvented takes on Texas and regional classics,” which hopefully means the off-the-menu chicken fried steak that briefly appeared at Pax will make a permanent return.

Opening day at Presidio – partnered by Dorris, Charles Bishop and contractor Taylor Lee – will reveal not just a beautifully designed, casual neighborhood restaurant, but a new path for the chef who made Pax Americana one of the Top 10 restaurants in the city during the two and a half years at that post.

went there saturday night after having dinner at SG.... awesome spot. didn't have anything to eat obviously but the drinks were solid. they kept the indoor/outdoor bar concept from SG. overall very very similar look and feel to SG but with a larger backyard/patio. should be an absolute hit especially during crawfish season. will definitely be a nice alternate to eight row.

Presidio @ 911 W 11th St in the Heights (Houston) sustained damage from an early morning fire Saturday.

A FIRE BROKE OUT early Saturday morning at Presidio, the patio-friendly comfort food restaurant and bar at 911 W. 11th St. in the Heights.

Around 7 a.m., a barrage of fire trucks could be heard barreling toward the restaurant. As of Saturday night, one of the patios was completely boarded up. Presidio only announced to its social media followers that it was closed Saturday, offering no additional details of the fire.


Presidio opened in February 2017 under partners Charles Bishop (Southern Goods) and Adam Dorris (Pax Americana). Southern Goods, which was also in the Heights, was destroyed by a fire in November 2017.
