More on Sigma Brewing Company from Houston Business Journal last May:

New EaDo brewery to open

Sigma Brewing Company LLC, a new craft beer brewery, plans to open in East Downtown toward the end of this year.

There's still a lot of work to be done, including receiving approval from the Texas Alcoholic Beverage Commission to sell alcohol and finishing the buildout of the brewery. But if all goes according to plan, the founders expect to open in November or December, co-founder Matt Peterson told the HBJ.

The brewery will be located at 3118 Harrisburg Blvd., along the light rail and near the BBVA Compass Stadium, home to Houston's two professional soccer teams, the Dynamo and the Dash.

"East Downtown is a perfect place to open a brewery," Peterson said. "There's a lot of culture and art in that area … We feel like we can add something unique from our product and brand to East Downtown."

Another brewery recently filed building permits to start its operations in north Houston, and Karbach Brewing Co. just opened the doors on its brand new tap room, as well.

When Sigma's brewery opens, it will be about 4,300 square feet. Most of that will be dedicated brewery space, but 1,200 square feet will be a tap room. The tap room will have a long bar with windows that show the brewhouse so customers can try out the different Sigma beers. There are no plans for food at this time.

The brewery will only produce about 1,000 barrels during its first 12 months of operation, Peterson said. The goal is to be able to try small, eclectic styles of beer. Once opened, the plan is to have a pale ale, Indian pale ale and a darker beer, such as a porter or stout.

Peterson, along with this other founders, Nick Sorenson and David Lynn, have always been big fans of beer. Sorenson worked in the film industry in California, and Peterson worked in the oil industry. Both realized they weren't doing jobs they enjoyed, Peterson said.

"We're centered on craft beer. It's always been in our lives," Peterson said.

Eventually, this will be the tap room in the new brewery. The windows off to the right will overlook the brewery.

HVAC going in. We'll be hot as hell in the brew house, but you'll be just right in the taproom. That's the kind of guys we are.

This is their response to questions about an opening date:

We wish we knew. It's complicated. You know, a lotta in's, lotta out's, lotta what-have-you's. A lotta strands to keep in our heads. The best we can say is maybe May or June, until it gets pushed back some more.
